This meal is part of the “One Shopping List for Multiple Meals” project I am starting on my blog. It goes with other recipes that involve chicken and many of the major ingredients. This pita goes well with a spinach side salad for a filling and fairly healthy lunch!
There is this fabulous cafe here on the North Shore called The Atomic Cafe (locations in Beverly and Marblehead). They make one of my most favorite sandwiches – goat cheese panini with pesto and tomato. I totally stole the recipe from them when I received my Cuisinart Griddler for Christmas! For those of you who do not have panini grill at home, I recommend putting your bread in the toaster first so you still get that nice crunch.
I am a salad freak. Although this is not the traditional green based salad, it is still just as, if not more, healthy. Not only that, it is pretty easy to make and this one has only 370 calories!! Plus, who doesn’t love chicken salad?
