I got this recipe from NYT.com and modified it to suit my palate. It’s full of good stuff including protein-rich quinoa, tangy dressing and veggies!
This has got to pretty much be my favorite salad that I make. The crunchy walnuts, chewy dried cranberries and tangy feta cheese all accent each other perfectly. Add a bit of poppy seed dressing and it’s complete :)

This meal is part of the “One Shopping List for Multiple Meals” project I am starting on my blog. It goes with other recipes that involve chicken and many of the major ingredients. This pita goes well with a spinach side salad for a filling and fairly healthy lunch!
