Orzo with Tomatoes, Basil and Feta
This is a great vegetarian dinner recipe that is easy to make. It’s very light and could eve be served as a side dish along fish or chicken. I got it from All Recipes a while ago and swapped out the recommended Gorgonzola cheese for Feta cheese because I like it better. I suggest if you like Gorgonzola or Bleu cheese to give it a whirl.

Goat Cheese Panini with Pesto and Tomato
There is this fabulous cafe here on the North Shore called The Atomic Cafe (locations in Beverly and Marblehead). They make one of my most favorite sandwiches – goat cheese panini with pesto and tomato. I totally stole the recipe from them when I received my Cuisinart Griddler for Christmas! For those of you who do not have panini grill at home, I recommend putting your bread in the toaster first so you still get that nice crunch.
Goat Cheese Dip with Green Chiles
This is just one of a few appetizers I plan to post in the next few days. With all the holiday parties coming up there is no doubt some of you might be in need of an appetizer idea that isn’t just the standard. This creamy and cheesy dip has an added kick with green chiles and cayenne pepper. Be sure to drain the ricotta the day you want to serve the dip. I recommend serving it with tortilla chips, but bread or crackers would also work well.
