- 1 ripe Hass avocado, cubed
- 1 vine-ripened tomato, chopped
- 1/4 red onion, sliced thin
- 2 tablespoons virgin olive oil
- 2 tablespoons fresh-squeezed lemon juice
- 1 tsp ground black pepper
It’s summer time and hass avocados are on my shopping list every week. I typically make guacamole with them, but I have recently discovered that I really like them as part of a salad! I crafted a simple salad that takes minutes to make and tastes delicious :)

The recipe below assumes that you know how to cube an avocado…if you do not look here for instructions!
Instructions
- In a medium mixing bowl, whisk lemon juice, olive oil and black pepper until emulsified. Add avocado, tomatoes, and red onion and mix with dressing. Note – stir lightly as the avocados will start to mash.

This sounds pretty much like something between guacamole and pico de gallo – try it with a bit of chopped cilantro and green chile (if you like a kick) on corn tortillas, or as a side to those black bean enchiladas. Delicious!
Yeah I guess it kind of is…although the way I cut the avocados is a little big for chips! :) And you know what’s funny? I did make it as a side dish for the enchiladas…it was delish!

I just had this with chicken and it was awesome! I made double the dressing, set aside half for the salad, grated a few cloves of garlic into it along with some of the lemon zest into and whisked it again, then marinated a piece of chicken breast in it for 10-15 min. In the meantime, I made the salad, then pan roasted the chicken breast. Once the breast was done, I tore it into chunks and mixed it with the salad.
The only problem was keeping from eating the salad while the breast was marinating. It was a perfect little meal for myself! Thank you!
