My favorite salad at an Italian restaurant is caprese, hands down. There is nothing like fresh Mozzarella, sweet tomatoes, basil and the tang of balsamic vinegar drizzled on the top. I’ve taken this classic and created an easily edible form by putting it on tooth picks (mini skewers in my book!). It’s also easy to store the ingredients because they come in their own little packages. I made about 100 skewers for my mothers 50th surprise birthday party and they were a huge hit!
- 4 grape tomatoes, sliced in half
- 8 small Mozzarella balls (I used the ones in water by Bellagioso)
- 2 basil leaves cut into quarters
- 8 tooth picks
- Balsamic for drizzling
- Salt and pepper
- Thread mozzarella, basil and tomatoes on toothpicks. Sprinkle with salt and pepper, drizzle with balsamic vinegar.
